The only reason I can think of to want this feature is in a controlled user environment. The best way to disallow the user from closing Hamachi is to not give the user Hamachi. Set the network up as a Gateway. A gateway has limitations, but the only reason it would not be a viable solution is if the user is going to be moving the computer and accessing from various access points off the LAN. If you trust the user enough to let them leave with a computer, teach them that Hamachi exists, and not to close it, else his or her computer will not function as they intend it to.
